Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Whiting or cod
Provides the main flavour and flakes into tender pieces as the soup simmers.
Butter
Fat that carries flavour and forms the base of the flour roux.
Flour
Starch that thickens the stock into a smooth, light sauce when cooked.
Egg yolks
Proteins that thicken and enrich the soup when gently heated.
Cream
Adds fat for a richer, silkier texture and mellows the soup.
Lemon juice
Adds acidity that brightens the flavour and balances the richness.

The step that matters

Cook the soup without boiling after adding the egg yolk mixture. Egg yolk proteins thicken gently with heat, but above a simmer they tighten and scramble. Boiling would curdle the soup and leave it grainy.

Swap the mace

How well each one fits the dish's main ingredients (whiting, carrot, milk, butter, flour, egg, cream):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Capersfits better
  4. Macethe original

Fit is the average pairing score against whiting, carrot, milk, butter, flour, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
