Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Neck of mutton
Provides the meat and bones that give the broth its flavor and body.
Rice or pearl barley
Releases starch as it simmers, thickening the broth slightly.
Carrot
Adds sweetness and aroma as it softens in the simmering liquid.
Onion
Contributes savory depth and aroma to the broth.

The step that matters

Skimming the foam. Bringing the liquid to a boil slowly and skimming foam keeps the broth clear and free of impurities that would otherwise cloud it and taste scummy.
