Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein and savory body of the stew as it simmers.
Flour
Thickens the liquid as its starch swells with heat, giving the stew body.
Egg yolk
Enriches the sauce and adds richness and smoothness as it sets gently with heat.
Milk
Adds creaminess and mild sweetness to the cooking liquid.

The step that matters

Bring to a boil, stirring to keep it smooth. Flour starch can clump if it is added without being blended smooth first, and stirring while heating disperses it evenly so the sauce thickens without lumps.

Swap the celery

How well each one fits the dish's main ingredients (chicken, milk, flour, egg, pepper):

  1. Nutmegfits better
  2. Turmericfits better
  3. Cardamomfits better
  4. Celerythe original

Fit is the average pairing score against chicken, milk, flour, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
