  1. Pass the chicken or veal through a mincing machine until it weighs ¼ lb.

  2. Place the minced meat in a well‑buttered jar or jam pot.

  3. Cover the jar closely.

  4. Put the jar into a saucepan of boiling water.

  5. Simmer gently for 45 minutes.

  6. Pound the chicken in a mortar.

  7. Rub the chicken along with the liquid through a wire sieve.

Finish the mixture

  1. Whip the cream slightly.

  2. Stir the whipped cream into the sieved meat.

  3. Season the mixture with pepper and salt.

Serve

  1. To serve hot, heat the mixture in a saucepan. Place the hot mixture on neat squares of hot dry toast.

  2. To serve cold, serve on dry toast, in ramekins, or in a small china dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken or veal
Provides the main protein, which sets into a smooth, firm panada when gently cooked.
Cream
Adds moisture and richness, giving the sieved meat a light, soft texture.

The step that matters

Simmer gently for 45 minutes. Gentle, indirect heat in a water bath lets the meat set without boiling. Vigorous boiling toughens the proteins and makes the texture grainy and dry.
