Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut the fillets from the breast of the chicken.

  2. Place the fillets on a buttered baking tin.

  3. Season with pepper and coarse sea salt.

Bake and serve

  1. Cover with buttered paper and bake at 400°F (200°C) for 12 to 15 minutes.

  2. Serve on a hot dish with or without sauce.

  3. If desired, serve on a strip of mashed potatoes with white sauce and rolls of toasted bacon around the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the lean meat that is cooked to become the main dish.
Butter
Adds fat and richness to the tin and helps prevent the fillets from sticking.

The step that matters

Bake for 12 to 15 minutes. Chicken fillets are lean and dry out quickly once overcooked. Baking them only until the meat is cooked through keeps them juicy, and the buttered paper cover traps moisture during baking.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (chicken, butter, pepper, sauce):

  1. Capsicumfits better
  2. Tomatofits about as well
  3. Potatothe original
  4. Onionfits about as well

Fit is the average pairing score against chicken, butter, pepper, sauce. Candidates are from the same food group and used in at least 100 recipes.
