What each ingredient does

Patna rice
Provides the starch that swells and sets as the grains cook, giving the dish its structure and texture.

The step that matters

Checking for doneness. Rice keeps cooking in its own heat, and overcooking breaks down the starch so grains turn soft and mushy. Checking early keeps each grain firm, and the cold water rinse halts the cooking.
