Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Topside or steak
Forms the wrapped outer layer and becomes tender during long gentle simmering.
Diabetic sausage meat
Provides a savoury, moist filling that flavours the inside of each roll.
Stock
Cooks the rolls gently and forms the liquid that becomes the finished sauce.
Meat glaze
Adds concentrated meaty flavour and body to the strained stock sauce.

The step that matters

Simmer gently for two hours. A gentle simmer keeps the beef tender and the rolls intact, while a hard boil toughens the muscle fibres and can break the rolls open.

Swap the allspice

How well each one fits the dish's main ingredients (meat, shallot):

  1. Capersfits better
  2. Thymefits better
  3. Tarragonfits better
  4. Allspicethe original

Fit is the average pairing score against meat, shallot. Candidates are from the same food group and used in at least 100 recipes.
