Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Peel and trim the mushrooms, then chop the trimmings.

Make the filling

  1. In a saucepan, cook the chopped trimmings with butter, shallot, parsley, and ham for a few minutes.

Bake and serve

  1. Place the mixture on top of each mushroom and arrange them on a baking tin.

  2. Bake for 8 minutes.

  3. Serve on a small buttered slice of gluten bread, very hot.
