Grilled Mushrooms

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the mushrooms

  1. Rinse, peel, and trim the mushrooms.

  2. Remove the stalks and place the mushrooms, upside down, on a small baking tin.

  3. Add scraps of butter, pepper, and salt to each mushroom.

  4. Pour the gravy or stock over the mushrooms.

Bake and serve

  1. Bake in a 400°F (200°C) oven for about 8 minutes.

  2. Butter thin slices of gluten bread and heat them.

  3. Place a mushroom on each slice of bread and serve immediately.

What each ingredient does

Mushrooms
Form the main body of the dish and release moisture and savory flavour as they cook.
Butter
Adds richness and helps the mushrooms brown and carry seasoning.
Gravy or stock
Adds moisture and savoury flavour while the mushrooms steam and bake.
Gluten bread
Provides a warm, sturdy base that holds each mushroom and soaks up the juices.

The step that matters

Baking the mushrooms. Mushrooms are mostly water. Too little heat or too long a bake lets them release liquid and turn soggy, while the gravy or stock needs enough heat to reduce into flavourful juices.
