Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Fillet the fish if possible.

  2. Butter a soup plate lightly and place the fish on it.

  3. Sprinkle the fish with lemon juice, pepper, and salt.

What each ingredient does

Fish (in the method)
Forms the main body of the dish, cooking gently into flaky, moist flesh when steamed.
Butter
Adds richness and helps keep the fish from sticking to the plate.
Lemon juice
Adds acidity that brightens the flavour of the mild fish.

The step that matters

Steam for about 10-15 minutes. Fish cooks quickly and turns dry and tough if overcooked. Steam is gentle, so checking for opaque, flaky flesh near the shorter end of the time helps keep it moist.
