Roast Chicken

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Truss the chicken.

  2. Preheat your oven to 400°F (200°C).

  3. Place the chicken in a roasting tin and add the butter or dripping underneath.

Roast

  1. Roast the chicken, basting constantly.

  2. Cook a small chicken for about 40 minutes and a large one for about 1 hour.

  3. Once roasting begins, reduce the heat.

Serve

  1. When cooked, place the chicken on a hot dish and remove the skewers or trussing string.

  2. Serve with watercress and gravy around the dish. Add bread sauce if desired.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein; roasting cooks it through while keeping the meat moist.
Butter or dripping
Adds fat that helps the skin brown and carries flavour as it roasts.

The step that matters

Basting constantly while roasting. Spooning the melted fat over the bird keeps the surface moist and helps the skin brown evenly, so the meat does not dry out before it is cooked through.
