Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the main meat, whose lean protein firms and browns during cooking.
Butter
Adds fat for richness and helps brown the meat and onion.
Flour
Thickens the cooking liquid into a light sauce as it is stirred in.

The step that matters

Stir in the diced mutton and cook until browned. Browning the meat in fat creates flavourful Maillard compounds. Crowding the pan or stopping too early steams the meat grey and leaves the mince bland.

Swap the onion

How well each one fits the dish's main ingredients (mutton, butter, flour, pepper):

  1. Shallotfits better
  2. Leekfits better
  3. Potatofits better
  4. Onionthe original

Fit is the average pairing score against mutton, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
