Why it works: Sugar and vanilla are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 35,032 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Whip the cream until soft peaks form.
Add the caster sugar and vanilla essence to taste.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Cream
- Whipped into a foam that gives the set dessert its light, creamy body.
- Gelatine
- Sets the liquid cream so it holds its shape when turned out of the mould.
- Caster sugar
- Adds sweetness and balances the richness of the cream.
- Vanilla essence
- Provides the main aroma and flavour of the dessert.
The step that matters
Whip the cream only to soft peaks. Overwhipped cream turns grainy and can start to separate into butter. Stopping at soft peaks keeps it smooth and light, so it folds evenly with the gelatine mixture and sets with a fine texture.
