What each ingredient does

Egg yolks
Bind the mixture and enrich it as it cooks, helping it set into a firm filling.
Cream
Adds moisture and richness, keeping the filling soft inside the coating.
Cooked chicken or veal
Forms the main body of the filling, giving the croquettes their savory flavor.
Cooked ham
Adds salty, savory flavor to the filling.
Gluten breadcrumbs
Form a crisp outer crust that browns when fried.

The step that matters

Cook the filling until it binds together. The mixture must be cooked enough for the egg yolks to set and thicken it; if it stays loose, the balls will not hold their shape and may break open in the oil.
