Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which becomes tender through gentle simmering.
Stock
Forms the moist cooking liquid that the chicken and sauce are built on.
Egg yolks
Thicken the sauce as they set and add richness to its body.
Cream
Adds fat for a smooth, rich texture and softens the sauce's flavour.
Lemon juice
Adds acidity that brightens the flavour of the rich sauce.

The step that matters

Adding the egg yolks and cream. Egg yolks thicken the sauce only while it stays just below boiling. If the mixture gets too hot once the yolks go in, they scramble and the sauce turns grainy. Stir the yolk and cream mixture in gradually and keep the heat gentle.

Swap the mace

How well each one fits the dish's main ingredients (chicken, lemon, cream, egg, pepper):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Nutmegfits better
  4. Macethe original

Fit is the average pairing score against chicken, lemon, cream, egg, pepper. Candidates are from the same food group and used in at least 100 recipes.
