Why it works: Shallot and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 3,737 recipes. Both carry 2,4-decadienal, which smells seaweed. The science ↓
Mushrooms Farcies
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Peel and trim the mushrooms.
Chop the trimmings.
Make the filling
Cook the chopped trimmings in a saucepan with the butter, shallot, parsley, and ham for a few minutes.
Put the mixture on top of each mushroom.
Bake and serve
Place on a baking tin and bake at 400°F (200°C) for eight minutes.
Serve on a small buttered slice of gluten bread, very hot.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Mushrooms
- Form the base that holds the filling and softens as it bakes.
- Butter
- Adds fat and richness, carrying the flavour of the filling and helping it brown.
The step that matters
Bake for only eight minutes. Mushrooms hold a lot of water, and overbaking lets them release it and go soggy, while the filling needs enough heat to become hot and savoury.
Swap the shallot
How well each one fits the dish's main ingredients (mushroom, ham, parsley, butter, pepper):
- Shallotthe original
- Carrotfits about as well
- Capsicumfits less well
- Potatofits less well
Fit is the average pairing score against mushroom, ham, parsley, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
