The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Line patty tins with a little almond pastry.

  3. Cream the egg yolk until thick.

Fill and bake

  2. Spoon the mixture into the lined patty tins.

  3. Bake until set and lightly golden.

What each ingredient does

Egg
Yolk enriches and binds, while the whipped white lightens and helps the filling set.
Unsweetened coconut
Adds chewy texture and a coconut flavour to the filling.
Ground almonds
Adds body, nutty flavour and a tender, moist crumb to the filling.
Saccharine
Provides sweetness without adding sugar bulk.

The step that matters

Folding in the whipped egg white. Fold gently so the air trapped in the whites is kept. Overmixing deflates the foam, which leads to a denser, less lifted filling after baking.

Swap the coconut

How well each one fits the dish's main ingredients (egg, almond):

  1. Raisinfits better
  2. Vanillafits better
  3. Figfits about as well
  4. Coconutthe original

Fit is the average pairing score against egg, almond. Candidates are from the same food group and used in at least 100 recipes.
