Gravy and Sauce

Ingredients

Directions

  1. Collect the meat drippings after cooking.

  2. Pour off the fat, leaving the sediment.

  3. If using stock, add it to the sediment; if using water, add a small amount of meat essence.

  4. To thicken, sprinkle flour on the sediment and fry together.

  5. Season to taste and add caramel if the color is too pale.
