What each ingredient does

Butter
Melts with the flour to form a roux that thickens the sauce and adds richness.
Flour
Combines with the butter to form a roux that thickens the sauce.
Cream
Adds richness and body to the sauce, giving it a smooth, mellow texture.
Chicken broth
Forms the liquid base of the sauce, adding savory flavor and moisture.
Mushrooms
Add earthy flavor and a tender, moist texture to the finished dish.

The step that matters

Cook the sauce over medium heat for 5 minutes. Flour thickens liquid only after it is cooked, so the sauce must simmer long enough to lose its raw starchy taste and reach a smooth, lightly thickened consistency. Gentle heat helps prevent lumps and scorching of the cream.

Swap the mace

How well each one fits the dish's main ingredients (chicken, mushroom, butter, flour, cream, lemon, pepper):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against chicken, mushroom, butter, flour, cream, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes.
