Cauliflower with Cheese

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the cauliflower

  1. Blanch the cauliflower in boiling water for 5 minutes, then transfer to cold water until ready to cook.

  2. Boil the cauliflower in salted water until tender, about 20 minutes. Drain and press lightly with a clean cloth to remove excess water.

Make the cheese sauce

  1. In an enamelled saucepan, mix butter, flour, milk, cayenne, and cream. Stir over low heat for 5 minutes.

  2. Add the grated cheese to the sauce and stir until melted.

Bake and serve

  1. Pour the cheese sauce over the cauliflower and bake in the oven at 400°F (200°C) until golden.

What each ingredient does

Cauliflower
Forms the bulk of the dish and, once tender, provides the main body under the sauce.
Butter
Melts with the flour to form the fat base of the sauce, carrying flavour and richness.
Flour
Thickens the butter and milk into a smooth sauce as its starch swells when heated.
Milk
Forms the liquid of the sauce, giving it a creamy, pourable body.
Parmesan cheese
Melts into the sauce for savoury, salty flavour and helps the top brown in the oven.

The step that matters

Drain and press the cauliflower. Excess water left on the cauliflower dilutes the sauce and makes it thin and watery, so the florets should be drained and gently pressed dry before saucing.
