What each ingredient does

Tomato pulp
Forms the body of the sauce and supplies its main tomato flavour.
Shallots
Add a mild, sweet onion-like aroma that mellows as the sauce reduces.
Vinegar
Reduced with the shallots to add sharp acidity that brightens the tomato.
Anchovy sauce
Adds savoury depth, giving a rounded umami note without tasting fishy.

The step that matters

Boil until reduced by half. Reducing the vinegar and shallots concentrates their flavour and cuts sharpness. Stopping too early leaves the sauce sour and thin, while over-reducing can make it overly strong or sticky.

Flavor stand-ins for the thyme

How well each one fits the dish's main ingredients (tomato, shallot, vinegar, anchovy, sauce):

  1. Capersbetter flavor fit
  2. Tarragonbetter flavor fit
  3. Garlicbetter flavor fit
  4. Thymethe original

Fit is the average pairing score against tomato, shallot, vinegar, anchovy, sauce. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
