What each ingredient does

Steak
Main meat that becomes tender when rolled and cooked slowly in moisture.
Bread crusts
Soaked bread gives the forcemeat body and helps it hold moisture.
Suet
Melting fat keeps the stuffing moist and adds richness to the meat.
Egg
Egg binds the forcemeat so it holds together when heated.
Dripping
Hot fat browns the outside of the steak and adds savoury flavour.

The step that matters

Browning in hot dripping. The dripping must be hot enough to brown the outside of the rolled steak quickly. Browning creates savoury flavour through the Maillard reaction, and searing seals the surface before the slow stewing.
