What each ingredient does

Sweet almonds
Ground to a paste, they give the soup its body and creamy, nutty flavour.
Cream
Adds richness and smoothness, softening the soup's texture.
Hard-boiled egg yolks
Rubbed into the cream, they help thicken and enrich the soup.
Stale bread
Adds body and helps bind the soup's texture.
White stock
Forms the liquid base that carries the other ingredients.

The step that matters

Stirring the egg yolks into the cream. Rubbing the yolks smoothly into the cream before adding them keeps them from clumping. Once the soup is boiling, the yolks can scramble and curdle, so the final boil should be handled carefully.

Swap the mace

How well each one fits the dish's main ingredients (almond, veal, bread, lemon, cream, egg):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against almond, veal, bread, lemon, cream, egg. Candidates are from the same food group and used in at least 100 recipes.
