Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chestnuts
Provide the starchy, bulky base that gives the stuffing its body.
Eggs
Bind the mixture so it holds together when formed into a paste.
Breadcrumbs
Absorb moisture and add bulk, giving the stuffing a soft, cohesive texture.
Butter
Adds fat for richness and a smoother mouthfeel.
Onion
Adds savoury aroma and sweetness as it softens during boiling.

The step that matters

Add the egg and stock gradually. Too much liquid makes the paste loose and hard to shape, while too little leaves it dry and crumbly. Adding the egg and stock in small amounts lets you judge the texture before the mixture sets.
