Mutton Hot-pot

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Parboil the onions and potatoes, then slice them.

Layer and bake

  1. Grease a deep baking dish and line it with potatoes.

  2. Add a layer of onions, then the mutton cut into small pieces, seasoning with salt and pepper.

  3. Add another layer of onions and fill up with potatoes.

  4. Pour in 2 cups of gravy or stock, cover with a lid or foil, and bake for 2 hours at 350°F (175°C).

  5. Remove the cover, drizzle dripping over the potatoes, and return to the oven to brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mutton
Provides the rich meat flavour that the dish is built around.
Potatoes
Form the layered top and base, absorbing juices and browning on the surface.
Onions
Add sweetness and aroma as they soften during the long, moist bake.
Dripping
Fat that helps the potato top crisp and brown in the final stage.

The step that matters

Browning the potato top. Potatoes need dry, direct heat and fat to brown; leaving the lid on too long steams them pale and soft, so the cover must come off before the final return to the oven.

Swap the onion

How well each one fits the dish's main ingredients (mutton, potato, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
