Irish Stew

Why it works: Potato and onion are a kitchen classic. They rank in the top 3% of all ingredient pairs, and cooks put them together in 9,023 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Irish Stew

Ingredients

Directions

Prepare

  1. Trim the fat from the mutton and cut it into medium-thick chops.

  2. Peel and halve the potatoes, and cut the onions into thick slices.

Layer and stew

  1. Layer potatoes at the bottom of a stewpan, followed by mutton and onions, seasoning with pepper and salt.

  2. Repeat layers until the stewpan is full, ensuring plenty of vegetables on top.

  3. Pour in the water and let it stew gently for 2½ hours, keeping the lid tightly closed.

  4. Occasionally shake the pan to prevent burning.

What each ingredient does

Mutton
Provides the meat, whose fat and connective tissue enrich the broth as it stews.
Potatoes
Break down slowly during stewing, thickening the liquid and adding body to the dish.
Onions
Soften and turn sweet during the long stew, adding savoury depth to the broth.

The step that matters

Keeping the lid tightly closed while stewing. A tight lid traps steam so the stew cooks gently in its own moisture. Letting liquid escape can dry the top layers and scorch the base before the meat becomes tender.

Swap the onion

How well each one fits the dish's main ingredients (mutton, potato, pepper):

  1. Carrotfits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Onionthe original

Fit is the average pairing score against mutton, potato, pepper. Candidates are from the same food group and used in at least 100 recipes.
