Why it works: Pistachio and nuts match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 425 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓

Galantine of Veal

Ingredients

Directions

Prepare the veal

  1. Remove the bones from the veal and flatten it on a board.

  2. Spread a thick layer of sausage meat over the veal; if not well flavored, add minced herbs.

  3. Layer small diced tongue, chopped nuts, sliced gherkins, and small pieces of truffles on top of the sausage meat.

  4. Add another layer of sausage meat over the fillings.

Cook and press

  1. Roll the veal tightly in a cloth like a pudding and boil for 6 hours.

  2. Once cool, tie it tightly with broad tape and press with a heavy weight.

Finish and serve

  1. Glaze the galantine to a nice dark brown when cold and serve garnished with parsley and aspic jelly.

  2. Cut off the first slice before serving to display the marbled appearance.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal breast
Forms the outer wrapper that holds the rolled filling together during cooking.
Sausage meat
Provides the main savory filling and moist, rich body around the other ingredients.
Tongue or ham
Adds meaty texture and savory flavor to the layered filling.
Truffles
Contributes a strong, earthy aroma that perfumes the sausage and veal.
Pistachio nuts
Adds crunch and contrast to the soft meat, and colour to the marbled slice.

The step that matters

Rolling and tying the veal tightly before boiling. Tight rolling and firm tying keep the layers compact so the filling does not separate or leave gaps. Pressing after cooling helps the meats bind into a firm, sliceable loaf.

Swap the nuts

How well each one fits the dish's main ingredients (veal, meat, ham, truffle, pistachio):

  1. Walnutfits better
  2. Chestnutfits better
  3. Almondfits about as well
  4. Nutsthe original

Fit is the average pairing score against veal, meat, ham, truffle, pistachio. Candidates are from the same food group and used in at least 100 recipes.
