Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Yeal and Ham Pie
Ingredients
Directions
The book says “a fairly quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Cut the veal into square pieces and layer them in a pie dish.
Sprinkle a portion of the herbs, spices, seasoning, lemon peel, and sliced eggs over the veal.
Cut the ham very thin and add a layer on top.
Continue layering until the dish is full, ensuring the ham is on top.
Bake and serve
Cover the edge of the dish with puff pastry and pour in about ½ pint of water.
Cover with more pastry, decorate with leaves, brush with egg yolk, and bake at 400°F (200°C) for 1 to 1.5 hours.
After baking, pour in nearly ¾ pint of strong gravy through a funnel.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Veal cutlets
- Forms the main body of the pie and cooks into tender, meaty layers.
- Boiled ham
- Adds savoury, salty flavour through the layers.
- Hard-boiled eggs
- Add richness and a firm, sliced texture between the layers.
- Strong gravy
- Added after baking to fill the pie with rich, savoury liquid.
Swap the mace
How well each one fits the dish's main ingredients (veal, ham, nutmeg, pepper, lemon, egg):
- Parsleyfits better
- Marjoramfits better
- Tarragonfits better
- Macethe original
Fit is the average pairing score against veal, ham, nutmeg, pepper, lemon, egg. Candidates are from the same food group and used in at least 100 recipes.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
