Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolk
Binds the breadcrumb coating so it adheres to the cutlets.
Breadcrumbs
Form a crisp, browned coating when fried.
Clarified butter
Carries heat and promotes even browning of the coating.
Gravy
Provides moisture and savoury body to the sauce.
Shallots
Add aromatic, mildly sweet flavour to the sauce as they soften.

The step that matters

Frying the cutlets. Frying at a steady heat for about 5 minutes browns the breadcrumb coating before the chicken dries out. Too little heat lets the coating soak up fat and turn greasy, while too much burns it before the inside warms through.

Swap the mace

How well each one fits the dish's main ingredients (chicken, bread, butter, egg, lemon, sauce, shallot):

  1. Capersfits better
  2. Tarragonfits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against chicken, bread, butter, egg, lemon, sauce, shallot. Candidates are from the same food group and used in at least 100 recipes.
