What each ingredient does

Hominy
Forms the bulk of the croquette and gives it a soft, starchy body.
Milk
Cooks into the hominy to add moisture and a creamy texture.
Butter
Adds richness and fat that softens the mixture.
Eggs
Bind the mixture and form a coating that holds the bread crumbs.
Bread crumbs
Form a crisp, golden outer crust when fried.

The step that matters

Chill the mixture before shaping. The mixture must be fully cold so it firms up enough to hold its shape. Shaping it warm makes it soft and sticky, and the balls may collapse or break apart in the hot oil.
