Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Boil and mash the potatoes, then line a buttered pie dish with them.

  2. Boil and slice the onions.

Layer and bake

  1. Layer slices of meat in the dish, followed by a layer of onions, seasoning both layers.

  2. Add a layer of mashed potatoes on top.

  3. Repeat the layers until the dish is filled.

  4. Dot the top with small pieces of butter.

  5. Bake at 350°F (175°C) for 30 minutes.

What each ingredient does

Tinned mutton
Provides the savoury meat filling that forms the main body of the pie.
Potatoes
Form the starchy mashed layers that line the dish and cap the pie, setting as they bake.
Onions
Add sweetness and aroma as they soften through boiling and baking.
Butter
Adds richness and moisture to the potato topping and helps it brown in the oven.
Gravy
Keeps the meat and onion layers moist and adds savouriness during baking.
