What each ingredient does

Breadcrumbs
Absorb the milk and give the pudding its body and soft crumb.
Suet
Adds fat that keeps the pudding moist and rich as it cooks.
Eggs
Bind the mixture and help it set firm as it cooks.
Carrots
Mashed carrots provide the main bulk, sweetness and moisture of the pudding.
Raisins
Add chewy pockets of concentrated sweetness throughout the pudding.

The step that matters

Moistening the batter with milk. Breadcrumbs keep absorbing liquid as they stand, so the batter should be thick but not stiff. Too little milk gives a dry, crumbly pudding, while too much makes it heavy and slow to set.

Swap the carrot

How well each one fits the dish's main ingredients (raisin, currant, sugar, egg, milk, nutmeg):

  3. Capsicumfits better

Fit is the average pairing score against raisin, currant, sugar, egg, milk, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
