Hot Cross Buns

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Mix the flour, sugar, spice, salt, and currants together.

  2. Make a hole in the flour and pour in the yeast mixed with ½ pint of warm milk; stir to make a thin batter and set aside to rise.

  3. Once risen, add the melted butter and enough milk to form a soft dough; cover with a dusting of flour and let rise again for 30 minutes.

  4. Shape the dough into buns and place on baking trays to rise for another 30 minutes.

  5. Mark each bun with a cross using the back of a knife and bake in a 400°F (200°C) oven for 15 to 20 minutes.

  6. Optionally, glaze the buns as directed for plain buns.
