Ingredients

Directions

Make the custard

  1. Beat the eggs well and add the grated chocolate and poured sugar.

  2. Stir in the milk and place the mixture in a jug in a saucepan of boiling water.

What each ingredient does

Eggs
Thicken the chocolate custard as they set gently with heat and give it structure.
Gelatin
Sets the chilled mixture so it holds its shape when turned out of the mold.
Grated chocolate
Provides the main flavour and, with the cream, a rich, smooth body.
Loaf sugar
Sweetens the dessert and softens the set texture.
Milk
Forms the liquid base that the eggs thicken into a custard.
Cream
Adds fat for a light, rich texture in the set dessert.

The step that matters

Stir continuously without letting the mixture boil. Egg proteins thicken gently with heat, but if the mixture boils they overcook and curdle, leaving a grainy texture. Straining afterward catches any small lumps.
