Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Arrowroot
Thickens the water and sugar mixture into a smooth, firm cream as it boils.
White sugar
Adds sweetness and body to the cream so the balls hold their shape.
Chocolate
Forms a sweet outer coating that sets firm around each cream ball.

The step that matters

Boil while stirring constantly. Arrowroot can clump or scorch on the bottom of the pan if it is not stirred, leaving lumps and an uneven thickened cream.
