What each ingredient does

Raspberries
Provides the bulk, flavour and body of the jam.
Sugar
Sweetens the jam, helps it set and preserves it.
Red currant juice
Adds acidity and natural pectin to help the jam set.

The step that matters

Boil again after adding the sugar. Sugar must dissolve fully before the jam is boiled. Boiling concentrates the sugar and pectin so the jam can reach a set, and skimming removes foam so it stays clear.
