What each ingredient does

Morella cherries
Supply the main fruit flavour and juice that mixes with the spirit over time.
Loaf sugar
Sweetens the infusion and draws juice from the cherries, helping form a syrup.
French brandy
Acts as the solvent that extracts flavour from the fruit and preserves the cherries.

The step that matters

Layering the cherries with sugar. The sugar must be spread through the cherries in the stated proportion. It draws out juice and dissolves into a syrup, and the balance of sugar and alcohol affects sweetness and how well the fruit keeps.

Swap the almond

The recipe marks almond as optional. How well each one fits the dish's main ingredients (sugar, brandy):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Walnutfits less well
  4. Hazelnutfits less well

Fit is the average pairing score against sugar, brandy. Candidates are from the same food group and used in at least 100 recipes.
