Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Robinson's 'patent' barley
Starch in the barley thickens the water slightly and gives the drink its body.
Boiling water
Heat cooks the barley and draws out its starch and flavour into the liquid.

The step that matters

Mixing the barley into a smooth paste with cold water first. Barley powder clumps when added straight to hot liquid. Blending it with cold water first disperses the particles so they hydrate evenly when the boiling water is added.

Swap the lemon

How well each one fits the dish's main ingredients (barley, sugar):

  1. Vanillafits better
  2. Figfits better
  3. Raisinfits better
  4. Lemonthe original

Fit is the average pairing score against barley, sugar. Candidates are from the same food group and used in at least 100 recipes.
