Why it works: Peas and mint are a kitchen classic. They rank in the top 2% of all ingredient pairs, and cooks put them together in 1,137 recipes. Both carry 1-octen-3-ol, which smells mushroom, earthy. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Green peas
- Provide the main body and flavour of the soup once simmered and sieved.
- Baking soda
- Raises the pH of the stock, helping the peas soften and break down during simmering.
- Lettuce
- Adds gentle sweetness and body to the soup as it cooks down.
- Mint leaves
- Contribute a fresh, aromatic flavour to the stock.
The step that matters
Simmering time for the peas. Fresh and dried peas need very different cooking times. Dried peas are denser and need the longer simmer to become tender enough to pass through a sieve smoothly.
