Rules for Boiling Fish

Ingredients

Directions

Prepare

  1. Soak salt fish and mackerel in cold water.

  2. Place all other fish in hot water, except salmon, which should go into boiling water.

  3. Add ½ tablespoon of vinegar and coarse sea salt to each quart of water for fresh fish.

Cook

  1. Simmer the water. Do not let it boil to avoid breaking the fish.

  2. Cook for about 8 minutes per pound, adjusting time based on the fish's thickness and size.

  3. Use a strainer or plate to lift the fish out easily.

  4. Drain the fish well.

Serve

  1. Serve on a folded napkin.

  2. Garnish with sliced or quartered lemon, chopped parsley, lobster coral, hard-boiled egg, or fennel for salmon and mackerel.

What each ingredient does

Fresh fish
Forms the main body of the dish, which firms and flakes as it cooks.
Vinegar
Added to the cooking water, it helps keep the fish flesh firm and light.
Coarse sea salt
Seasons the cooking water so the fish is flavoured as it poaches.

The step that matters

Keep the water simmering, not boiling. A rolling boil agitates the fish and can break its delicate flesh apart, while a gentle simmer cooks it evenly and keeps it intact.
