Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fish
Forms the main body of the croquettes and gives them their flavour.
Flour
Thickens the milk with butter into a binding sauce that holds the fish together.
Milk
Forms the liquid base of the sauce, giving it a smooth, creamy body.
Egg
Coats the shaped cakes so the breadcrumbs adhere and form a crust.
Butter
Adds richness and fat to the sauce, carrying flavour and softening the texture.

The step that matters

Cool the mixture fully before shaping. A warm, loose mixture cannot hold its shape and may split or spread when coated and fried. Cooling lets the starch-thickened sauce set so the cakes keep their form and do not break apart in the hot fat.

Swap the mace

How well each one fits the dish's main ingredients (butter, fish, flour, cream, milk, pepper, egg):

  1. Nutmegfits better
  2. Parsleyfits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against butter, fish, flour, cream, milk, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
