Why it works: Pepper and clove match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and 17,451 recipes mention both. Both carry ethyl octanoate, which smells fruity, wine. The science ↓

Giblet Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Scald the feet and remove the outer skin.

  2. Wash the head, chop off the beak, cut the neck into short lengths, and chop the pinions in half.

  3. Cut the gizzard into small pieces.

  4. Put all giblets into a pan with the onion and clove, cover with water, and simmer gently for 1 hour.

  5. Season well and let them cool.

  6. Prepare the beef steak as for a pie and arrange it in a pie dish with the giblets.

  7. Half fill the dish with the gravy, cover with pastry, and bake at 400°F (200°C) for about 1 hour.

  8. Serve hot with the rest of the gravy slightly thickened and well seasoned.

Flavor stand-ins for the clove

How well each one fits the dish's main ingredients (pepper, beef, onion):

  1. Garlicbetter flavor fit
  2. Thymebetter flavor fit
  3. Celerybetter flavor fit
  4. Clovethe original

Fit is the average pairing score against pepper, beef, onion. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
