Stuffed Vegetable Marrow

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Chop the meat and onion finely.

  2. Soak the breadcrumbs in the gravy.

  3. Mix the soaked breadcrumbs with the chopped meat and onion.

  4. Season the mixture with salt and pepper.

Prepare the marrow

  1. Peel the marrow and cut it in half lengthwise, then scoop out the seeds.

  2. Boil the marrow in salted water for 15 to 20 minutes.

  3. Drain the marrow carefully.

Stuff and bake

  1. Fill one half of the marrow with the meat mixture and place the other half on top.

  2. Place the stuffed marrow halves in a baking dish and add the stock.

  3. Cover and bake at 400°F (200°C) for 15 to 20 minutes, basting with gravy.

  4. Thicken the remaining gravy with a little flour and pour it over the dish.

  5. Serve the stuffed marrow.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Marrow
Forms the edible shell that holds the filling and softens as it cooks.
Breadcrumbs
Soak up gravy and help bind the filling so it stays moist.
Cooked meat
Provides the savoury body of the filling.
Flour
Thickens the remaining gravy into a glossy sauce.

The step that matters

Drain the marrow carefully. Boiled marrow is soft and watery, and it can tear easily. Draining gently and removing excess liquid keeps the halves intact and stops the filling from becoming soggy.

Swap the onion

How well each one fits the dish's main ingredients (meat, pepper, flour):

  1. Shallotfits better
  2. Capsicumfits better
