Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix the grated cheese, breadcrumbs, egg yolks, and seasonings.

  3. Whip the egg whites to stiff peaks and gently fold them into the mixture.

  4. Add the cream and mix until combined.

  5. Line patty tins with the pastry and fill each with a spoonful of the mixture.

  6. Bake for 7 minutes until golden.

  7. Serve very hot.
