Chocolate Cakes

Oven, in the book's wordsA very moderate oven

Ingredients

Directions

The book says “a very moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Cream the butter in a bowl.

  2. Add the grated chocolate and sugar, and mix well.

  3. Incorporate the beaten eggs into the mixture.

  4. Sift together the flour and baking powder, then add the sifted mixture to the bowl.

  5. Stir in a little milk to achieve a smooth batter.

  6. Pour the batter into a flat tin.

Bake and finish

  1. Bake at 350°F (175°C) for about 20 minutes.

  2. Once cool, cover with chocolate icing.

  3. Cut into fingers or fancy shapes.

What each ingredient does

Butter
Creams with sugar to trap air and give the cake a tender, rich crumb.
Eggs
Bind the batter and add structure as they set in the oven.
Flour
Forms the structure that holds the cake together as it bakes.
Baking powder
Releases gas in the oven so the cake rises and becomes light.
Grated chocolate
Adds chocolate flavour and richness to the batter.
