Scotch Shortbread

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Cream the butter in a bowl.

  2. Add the sugar and mix well.

  3. Gradually work in the flour, kneading it well.

  4. Roll out the dough to about ½ inch thick.

  5. Pinch the edges and prick all over with a fork.

Bake and cut

  1. Bake in a moderate oven at 350°F (175°C) until pale brown.

  2. Cut into pieces as soon as it comes out of the oven, as it is very brittle when cold.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Provides richness, a tender crumb and most of the flavour.
Flour
Forms the structure that holds the dough together once kneaded and baked.
Sugar
Adds sweetness and helps give the shortbread its crisp, fine texture.

The step that matters

Cut the shortbread as soon as it leaves the oven. Shortbread is rich in butter and firms as it cools, becoming very brittle. Cutting while it is still warm and soft prevents cracking and crumbling.
