What each ingredient does
- Dripping
- Provides the fat that is kept and clarified for cooking.
- Water
- Dissolves and separates impurities from the fat as the mixture cools.
The step that matters
Scraping the underside of the caked dripping. Water and meat residue cling to the underside of the solidified fat. Scraping it off removes these impurities, which would otherwise spoil the clarified fat and shorten its keeping time.
