Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Yeast
Ferments the sugar into carbon dioxide, which makes the drink fizzy.
Sugar
Provides sweetness and the food the yeast ferments.
Ginger
Provides the spicy aroma and flavour.
Lemons
Add acidity and bright aroma from the juice and rind.
Cream of tartar
Adds acidity that gives the drink a tart edge.

The step that matters

Adding the yeast. Yeast is killed by very hot liquid, so the mixture must be lukewarm before the yeast goes in. Adding it too hot stops fermentation, and the drink will not become fizzy.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, cream, ginger):

  1. Vanillafits better
  2. Coconutfits about as well
  3. Lemonthe original
  4. Orangefits about as well

Fit is the average pairing score against sugar, cream, ginger. Candidates are from the same food group and used in at least 100 recipes.
