Boiled Puddings

Ingredients

Directions

  1. Ensure the mould or basin is dry and well greased with butter or fat.

  2. Fill the pudding mould completely.

  3. Tie a scalded and floured cloth securely over the top of the basin.

  4. Bring water to a rapid boil before adding the pudding.

  5. Ensure the water completely covers the pudding and is deep enough to float those boiled in cloths.

  6. Add boiling water as needed to maintain the level.

  7. Let the pudding stand for a few minutes before turning it out to allow steam to escape.
