Almond Cream

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the almonds

  1. Blanch and skin the almonds, then chop them coarsely.

  2. Bake the almonds in the oven at 350°F (175°C) until light brown.

Make the cream

  1. Dissolve the gelatine and sugar in 3 tablespoons of water.

  2. Whip the cream until stiff, then add the dissolved gelatine and the cooled almonds.

  3. Mix all ingredients lightly together.

  4. Pour the mixture into a prepared mold and refrigerate until firmly set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the nutty flavour and a crunchy texture that contrasts with the cream.
Cream
Whipped to air and fat, giving the dessert its light, rich body.
Leaf gelatine
Sets the liquid mixture so it holds its shape when chilled.
Sugar
Sweetens the cream and dissolves into the gelatine mixture.

The step that matters

Whip the cream until stiff, then fold in the gelatine. Over-whipped cream turns grainy and loses air, while gelatine added warm and too quickly can deflate it or set in streaks. Adding the dissolved gelatine as the cream is stiff but still smooth keeps the mixture airy and evenly set.

Swap the almond

How well each one fits the dish's main ingredients (cream, sugar):

  1. Almondthe original
  2. Pistachiofits about as well
  3. Chestnutfits about as well
  4. Hazelnutfits less well

Fit is the average pairing score against cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
